Homemade Peanut and Almond Butter Cups
Makes 6 Cups
Ingredients:
4 Tbs coconut oil
8 Tbs chocolate shakeology OR unsweetened cocoa powder
2 tsp honey (PLEASE NOTE HONEY IS ONLY NEEDED IF YOU ARE NOT USING SHAKEOLOGY)
3 Tbs peanut butter or almond butter (of butter of choice for filling)
Directions:
-Heat 2 Tbs of coconut oil in microwave for about 15 seconds, until liquid
-Mix 4 Tbs of chocolate shakeology or unsweetened cocoa powder (and 1 tsp honey if using cocoa powder)
-Pour evenly about 1 tsp chocolate mixture into greased muffin tin (I used cupcake wrappings and sprayed them just to make sure nothing stuck)
-Let freeze for about 5-10 mins
-Add about 1/2 Tbs to each chocolate concoction and spread evenly if needed (almond butter was more solid and needed to be leveled out)
-Let freeze for about 5-10 mins
-Heat 2 Tbs of coconut oil in microwave for about 15 seconds, until liquid
-Mix 4 Tbs of chocolate shakeology or unsweetened cocoa powder (and 1 tsp honey if using cocoa powder)
-Pour evenly over top about 1 tsp.
-Freeze for at least 30 mins
-ENJOY :)
