Don't dis it until you try it! Everyone is so skeptical of TOFU...but this recipes is on point and super yummy and healthy! See below for recipe.
Tofu Stir Fry:
Ingredients:
1 cup cooked brown rice
1/2 cup chopped zucchini
1/2 cup chopped sweet onion (about 1/4 onion)
1/2 cup chopped asparagus
1 cup cubed Tofu (firm is fine)
1/4 cup chopped green onion
1 tbs soy sauce
1 tsp garlic powder
1 tbs coconut oil or olive oil
1 tbs sesame seeds
Sauce:
1 tbs all natural peanut butter
1 tbs soy sauce
1/2 tsp ginger (grated)
1/2 tsp garlic (grated/chopped)
1 tsp honey
water
Directions:
-heat pan with oil on med heat
-add all veggies and saute for about 2-3 mins
-add tofu and sesame seeds and garlic powder and 1 tbs soy sauce
-Saute for about 5-10 mins (time depends on oven and how done you want everything)
-In a food processor add all ingredients (minus water) of sauce and blend for a couple of mins. Add water when needed to make consistency wanted.
-Make sure you heat up your rice if cold. Layer on plate, add veggie/tofu mixture, add sauce and green onions on top and enjoy :)
