At first I was like...this will never match up to a regular grilled cheese! But I was proven wrong...this sucker was amazing!! I did the vegan cheese bc my body doesn't prefer dairy I have learned....and I added 6 slices of turkey in mine. And the all natural tomato soup was amazing with it! A must try and pretty easy recipe...see below!
Cauliflower Grilled Cheese
Recipe:
Ingredients:
Half a cauliflower chopped
1/2 tsp garlic powder
1 egg
1-2 slices of cheese of choice (I used mozzarella vegan)
6 slices of non or low-fat turkey meat
Directions:
-Preheat oven to 350
-Boil water and add cauliflower until soft about 5-10 mins
-Pulse cauliflower in food processor until blended
-Take a kitchen towel (let the cauli cool for a little) and squeeze as much water as you can out of it
-Put in bowl add 1/2-1 slice of cheese (pull apart), garlic powder, and egg
-Mix with spoon until blended
-Use pan or cookie sheet and layer with wax paper and also spray with oil to ensure it does not stick
-Scoop cauli mixture into two clumps about even
-Use spoon or hands to make into rectangular shape
-Bake in oven until brown (about 10-15 mins)
-Heat skillet with oil (I used coconut oil) add one side using spatula put rest of cheese, heated turkey (I just warmed it up in microwave for 15 seconds) and add other side.
-Flip in about 5 mins and ENJOY!
-Have with your fav soup!
